Creamy Corn Chowder
Ingredients
- 2.5 cups filtered water
- 3 cups corn, off the cob
- 1/2 cup avocado, mashed
- 1/4 cup celery, chopped
- 1/4 cup yellow onion, chopped
- 1 TB nama shoyu
- 1 tsp. ginger, minced
- 1 tsp. garlic, minced
- 1/2 tsp. sea salt
- 1/2 tsp. jalapeño pepper
- 1/4 tsp. freshly ground black pepper
- 1/4 tsp. nutritional yeast
- pinch cayenne
- 2 tsp. fresh cilantro, minced
- 1/2 cup red bell pepper, diced
1. Place water, corn, avocado, celery, onion, nama shoyu, ginger, garlic, salt, jalapeño pepper, black pepper, nutritional yeast, cayenne, cilantro, and red bell pepper in a blender and blend on high for 30 seconds or until smooth.
2. Pour into bowls. If desired, cilantro and red bell pepper can be used to garnish the soup as opposed to putting them in the blender with the other ingredients. Serve immediately. Soup should keep for 2-3 days.
